Recipe: Pumpkin Apple Spice Cake

This is a perfect dessert or treat as we are moving into fall and closer to Thanksgiving! This cake will serve approximately 12 slices.
Pumpkin Apple Spice Cake
Ingredients:
- 3 large eggs
- 2 cups white sugar
- 3/4 cup vegetable oil
- 1 can (15 ounces) pureed pumpkin (not pumpkin pie filling)
- 1/3 cup apple juice
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves (optional)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cups peeled apples of your choice (finely chopped, about 2 medium)
- 1/2 cup pecans chopped (optional)
Instructions:
- Preheat oven to 350°F and spray pan with vegetable pan spray (a bundt type cake pan works nicely).
- In large bowl, beat eggs with electric mixer until they turn a light yellow color. Gradually add sugar, oil, pumpkin, milk and vanilla; beat thoroughly.
- Combine flour, cinnamon, cloves (if adding), salt and baking soda; add to egg mixture and mix well.
- Gently stir in apples and, if using, nuts. Pour into prepared pan.
- Bake 55-60 minutes or until toothpick inserted in center comes out clean.
- Let cake cool in pan for 15 minutes.
- Remove from pan and cool completely on wire rack before icing.
**Any cream cheese type icing goes nicely with this cake. Garnish or decorate as you like!
